By admin • Feb 8th, 2008 • Category: Pahari Cuisine

Today we will tell you about Bhatt ki Churkani, it’s usually called a kumaoni recipes. For those who don’t know Bhatt is actually Black Bean. There are lots of way to use Bhatt in Pahadi cuisine, even I know three of them. But today let’s see how can we make Bhatt ki Churkani.

Ingredients

  • Black Bean (Bhatt): 1 cup
  • chopped Onion: 1 medium
  • Jeera whole: 1/2 tsp
  • Dhaniya powder: 1 tea spoon (tsp)
  • Jeera powder: 1 tsp
  • Rice flour: 2 table spoon (tbsp)
  • Chilli powder: 1/2 tsp or Whole 2-3 (both optional)
  • Oil: 2 tbsp
  • Salt as your taste
  • Water: 4 or 5 cups

Preparation:

  1. First Soak bhatt in water overnight.
  2. Heat oil in a karahi (Iron Karahi adds more taste into it). Add jeera, once jeera gets little light pinkish brown add chopped onion. Let it turns into light pink in color. If you like whole chilli then add it now.
  3. Add soaked bhatt (take water off, don't add any water) in the karahi and fry for a while.
  4. Now in separate pan fry plain rice flour, when it get fried add this into Karahi.
  5. Now add haldi, dhania, jeera powder and chilli powder (if you are using powder), fry for few more seconds.
  6. Finally add water and cook on high flames. Cover and simmer until bhatt gets soft and curry becomes thick or for 30-40 mins. The color of churkani should be dark greenish black (usually this comes when you use iron karahi) otherwise it would be more on black side.

Now served this with hot steamed rice.

Side Meal Ideas: You can either make “Palak ka kapa” or “Bari ki sabji” as a side dish. We will tell about this later.
